RECIPE | MANGO LOAF CAKE
1 mango
3/4 cup sugar
1/3 cup milk
1/2 cup oil

1 1/3 cups self raising flour
1 tsp baking powder
1/4 tsp salt

METHOD:
1) Preheat oven to 180°C fan forced
2) Prepare loaf tin by spraying with oil and lining it with baking paper
3) Remove mango pulp from the mango and place in a mixing bowl.

Use a hand held blender to purée the mango
4) To the bowl, add the flour, sugar, egg, milk, oil, baking powder and salt. Using a wooden spoon or spatula mix everything in well (making sure to break down the egg and any flour lumps)
5) Transfer cake mixture to the prepared tin and bake for approx 35-40 mins.

Check cake regularly in the last 10 mins by piercing a skewer in it.
Once skewers comes out clean, the cake is ready
